Assistant Winemaker

Domaine Chandon is seeking an Assistant Winemaker.

Under the direction of the Winemaker, the Assistant Winemaker will coordinate and review all activities involved in the wine production process. He/She will be committed to the highest production standards to make and preserve exceptional wines that collectively represents the Domaine Chandon portfolio.

Main responsibilities:

  • Assist the Sparkling Winemaker
  • Ensure production plans and quality parameters are met in terms of bottling, lab analysis follow-up from daily wine work, blending and other cellar operations
  • Provide direction and technical support for winemaking and cellar procedures.
  • Manage and maintain quality of bulk inventory.
  • Manage yeast and bacteria cultures, including viable cell count evaluation.
  • Direct the inoculation of  primary and secondary fermentations.
  • Direct the manufacture of liquors for disgorging and secondary fermentation.
  • Order winemaking supplies.
  • Direct supervision of staff where appropriate.
  • Participate in blending tastings and decisions.
  • Participate in developing new products.
  • Researching and implement new procedures.
  • Responsible for coordinating tastings and recommending appropriate action in consultation with the Sparkling Winemaker.
  • Maintain an active awareness of industry trends, developments, education and research activities.
  • Design in consultation with Sparkling Winemaker experimental projects relating to grape and wine quality.
  • Write cellar work orders coordinating cellar activities as needed.
  • Proficiency winery bulk wine tracking system.
  • Monitor cellar inventory for tank toppings, SO2 additions and other maintenance operations.
  • Act as backup when necessary for all members of the winemaking team, having a working knowledge of programs and activities that are current in other departments dealing with winemaking quality.
  • Act as winery spokesperson with public, trade and press.

 

Qualifications, skills and experience required:

Education:

  • B.S., Bachelor or ideally Master’s Degree in Winemaking, Enology or related field

Languages :

Fluent in English and at least another language. Spanish and Mandarin preferred.

Professional experience & know how :

  • Minimum 3 years experience in winemaking industry.
  • At least 2 different vintages/harvests in 2 different countries and languages.
  • Experience of Méthode Traditionnelle/Champenoise sparkling winemaking preferred

 Technical & management skills :

  • Analysis of Variance, Multiple Regression, Statistical Quality Control, P.C.A.
  • Experience writing reports, business correspondence and procedure manuals.
  • Computer skills including Word Processing, Data Base, and Spread Sheet.
  • Strong organizational, communication and computer skills are required
  • Ability to work safely, including the proper use of protective equipment and proper handling of hazardous substances as specified in Domaine Chandon’s Hazardous Materials Training Program.
  • Proven problem solver.

Seasonal Lab Technician

Domaine Chandon is seeking a Seasonal Lab Technician (from July or August 2015 to end of October 2015).

The Lab Technician is responsible to provide accurate and timely data, in addition to keeping records that support the creative winemaking process in order to achieve the highest quality wine product at the optimal cost.

Main responsibilities:

Laboratory Analysis Responsibilities (90%)
• Perform all routine analyses of musts and wines, including collecting tank and barrel samples.
• Maintain laboratory analysis quality through the use of standards and controls.
• Maintain laboratory equipment in proper working order.
• Monitor tank and barrel fermentations during harvest and report anomalies.
• Process grape maturity samples.
• Assist in the preparation of wine trials and evaluations such as tastings, dosage and SO2 trials, and cork sensory..
• Maintain a clean, orderly lab and understand the use of personal protective equipment.
• Be responsible for, and accurately perform, production bottling line startup procedures.
• Perform sanitation Quality Control checks including tanks, lines, and production equipment.
• Maintain the lab and technical tasting room in a neat and orderly manner.
• Calibrate the dosanna on a daily basis, insure correct liqueur and accurate dose for the sparkling wine being disgorged.
Comply with all safety regulations and safe storage of chemicals and supplies.
• Demonstrate proficiency in mathematics; be able to perform all calculations the lab uses.

Administrative (10%)
• Record and retrieve analytical results.


Qualifications, experience and skills required:

Education :
• B.S. in Enology, Food Science, Chemistry, Microbiology, or related field preferred.
• Or practical/professional experience in a food or beverage processing laboratory may be acceptable.

Languages :
• English

Professional experience & know how :
• Lab internship at an accredited university, and/or 2 years of experience working in a laboratory (preferred).

Technical & management skills :
• Knowledge of lab analysis and methodology.
• Familiar with, or interested in, learning Méthode Champenoise.
• Knowledge of the production of still and sparkling wine from crush to finished product.
• Good organizational and communication skills.

Cellar Worker II

Domaine Chandon is seeking for a Cellar Worker II.

The Cellar Worker II performs intermediate to advanced cellar operations with limited supervision in order to create premium wines.


Cellar Processes: (90%)
• With limited supervision, perform and direct routine operation of pumps and filters to rack, transfer, and clarify juice and wine.
• Under limited supervision operate all complex cellar equipment, including: membrane and pad filters, heat exchanger, centrifuge, and DE Pressure Filter.
• Responsible for sanitation in all areas of cellar operations including tanks and other equipment.
• Able to follow and complete work order instructions in detail.
• Perform all barrel procedures including receiving, prepping, filling, topping, cleaning/sanitation, and inventory.
• Gauge bulk inventory and transfer information to the work order.
• Measure, weigh and add chemical additions to wine.
• Collect wine samples for tasting or lab analysis.
• Set both manual and automatic tank temperature control.
• Conduct routine inventory counts of dry goods and wine.
• Safely operate forklift and handcarts.
• Operate presses and crushers.
• Handle shipping and receiving of wine tankers and grape deliveries.
• Maintain yeast and malo-lactic cultures to ensure viability.
• Perform equipment maintenance such as hose repair.

Team Support: (10%)
• General support for laboratory.
• Support for Operations department as needed.
• Train and direct less skilled workers.
• Review completed work orders for accuracy.


Qualifications:

Create and maintain an Excel spreadsheets documenting grape receiving, juice movements and additions
Coordinate juice and wine shipping including bill of lading management.
Selection of tanks for juice settling, and racking of juice into selected tanks for primary fermentation with all necessary additions
Participate in juice / wine tasting and decisions
Working with the winemaking team towards management of yeast and bacteria cultures, and must inoculation
Monitor fermentation process
Coordinate winemaking trials.
Coordinate with laboratory and cellar regarding work orders and analysis
Cellar and lab support as needed.

Seasonal Grape Sampler

Domaine Chandon is seeking for a Seasonal Grape Sampler.

Main responsibilities: To support the Winegrowing , Production and Lab staff with in-house winegrape sampling services using available intellectual,  technical, physical and natural resources to help deliver exceptional quality winegrapes at optimum ripeness consistent with the needs of the wine portfolio and grape supply in order to achieve the goals of the Business.

 

Assist the Winegrowing Team in collecting representative winegrape samples from Estate & Grower vineyard blocks :   

  • Per the sampling schedule established by the Viticulturist and/or the Director of Winegrowing, collect an average of  15 winegrape samples daily during the Harvest period from both internal and external grape supply.
  • Follow daily sampling schedule and sampling protocol (begin each sampling at 6am, have each samples delivered to Lab by 11am)
  • Maintain excellent communication with the Viticulturist on sampling needs of the Department.
  • Communicate daily to DC Grower Relations field observations.

Prepare sampled winegrapes for Crushpad Lab processing : 

  • Utilize resources provided by Lab to accurately
  • Utilize resources provided by Lab to process winegrape samples for Brix, pH, TA and Malic analysis
  • Daily data entry of all results to Winemaking Harvest Maturity Database

Assist the DC Viticulturist with the crop estimation/pest scouting/visual vine-block assessment process as needed. : 


Qualifications and experience required:

Education

  • High School diploma required  
  • Advanced degree in Viticulture & Enology preferred

Professional experience & know how:

  • Good organizational and communication skills.
  • Computer skills (Good knowledge of Excel, Word and Access).

Main responsibilities: Perform beginning to intermediate cellar operations with limited supervision during Harvest season.

  • Drive forklift.
  • Perform routine operations of pumps to rack, transfer, and clarify juice and wine.
  • Perform chemical additions to juice and wine.
  • Perform extraction operations during red fermentation and maceration (pump over, rack-and-return, aeration)
  • Set both manual and automatic tank temperature controls.
  • Monitor indigenous fermentations.
  • Collect wine/juice samples.
  • Support the laboratory by conducting routine analysis and data entry.
  • Perform intensive barrel work in caves (stirring, stacking, de-stacking, racking, filling, cleaning)
  • Participate in tastings and discussions with the Winemaking team. Learn from a permanent cellar crew that average 10 years of Newton Winemaking knowledge.
