Chandon Perfect Lemon
This is an excellent cocktail for a hot summer evening dining outside. It has just enough sweetness to counter the acidity of the lemon juice, but does not overpower the Chandon Brut. Make this sparkling cocktail a regular part of your summer repetoire.
1 cup raw sugar
3 cups filtered water
2 T dried lavender flowers
1 1/2 cups fresh organic lemon juice
1 bottle Brut Classic or Reserve Chardonnay Brut
Thin lemon slices and fresh lavender sprigs, for garnish
Put the sugar, 2 cups water and lavender flowers into a small saucepan and bring it to a simmer. Cook for 3 minutes until the sugar has dissolved, turn off the heat, and allow the sugar syrup to cool completely, then strain out the lavender flowers. In a pitcher combine the cooled lavender simple syrup with the lemon juice and remaining 1 cup water and mix well. Fill a Champagne flute halfway with the lemonade and top with Chandon Brut Classic or Chandon Reserve Chardonnay Brut. Garnish with a lemon slice.
