Chandon Rising Star

This red and fizzy libation is the uber sparkling cocktail for the Fourth of July—or any occasion that is worthy of something a little special. The syrup can be made ahead of time and kept in the refrigerator for up to 1 month.

1 oz Rising Star syrup
3 oz Chandon Brut Classic

Pour the syrup into a flute or other decorative glass. Top with the Brut and serve.

Rising Star syrup
1 1/2 cups water
1 1/2 cups sugar
4 oz dried cherries
4 oz fresh blueberries
Juice and zest of 1 lemon
1-inch piece of fresh ginger, peeled and sliced
8 oz pure pomegranate juice

Combine the water, sugar, cherries and blueberries in a non-reactive saucepan. Using a heavy spoon or muddler, mash the fruit. Add the lemon juice, zest and ginger. Bring to a boil. Remove from the heat and let sit for 20 minutes. Strain into a sealable container, add the pomegranate juice and refrigerate until ready to use.
