Cucumber takes center stage this slightly savory cocktail. Impress your guests with it after an afternoon of tennis or golf.
Yields 4 cocktails
2 oz cucumber-basil simple syrup (1 cucumber, 1 cup water, 1 cup sugar, 1 cup loosely packed basil leaves)
2 oz fresh lime juice
Dash Meyer lemon-sage bitters
12 oz Chandon Brut Classic
With a vegetable peeler remove a strip of the cucumber’s peel. Using the vegetable peeler, cut four thin strips of cucumber, leaving the edges intact. Set aside.
Peel and grate the remainder of the cucumber into a small saucepan. Add the water, sugar and basil leaves. Bring to a boil. Remove from the heat and let steep for 20 minutes. Strain into a container with a sealable top and chill. Discard the solids.
Twist the cucumber slices and place each in a flute. Pour equal amounts of the simple syrup into the flutes. Pour equal amounts of the lime juice into the flute. Top each with 3 oz Brut. Serve.
