Reserve Club Cuvée: a Wine as Distinctive as our Club Members
When we created our Crémant, Sparkling Winemaker Tom Tiburzi was inspired by our Club members’ passion for great wines. And with the new release, he’s decided to go a step further: “Chandon Crémant was the first wine made especially for the Club, so to honor our Club members, this unique wine will now be named for them.”
Tom Tiburzi - Domaine Chandon Winemaker
When we created our Crémant, Sparkling Winemaker Tom Tiburzi was inspired by our Reserve Club members’ passion for great wines. And with the new release, he’s decided to go a step further: “Chandon Crémant was the first wine made especially for the Club, so to honor our Club members, this unique wine will now be named for them.”
Why change the name?
“Our Club members are a really dedicated group,” explains Tom. “Many of them visit the winery, and they like to connect the great experience they have here with drinking our wines at home. So we wanted to give them something special: a wine in their honor that is truly different from all our other wines.”
A Luxurious Distinction
And what makes that difference? The crémant style uses a French winemaking technique that creates slightly less pressure in the bottle than a champenoise style, leaving the wine gently effervescent, with a distinctive creaminess. “This wine unfolds on the palate in a luxurious way,” says Tom. “It is beautifully rich and creamy, with complex ‘umami’ characters of toast and hazelnuts.”
This distinctive character begins when Tom meticulously tastes his way through individual lots of wine to find the ones that will lead to complexity. “I choose them for texture that integrates and coats the palate, not for fruitiness,” he notes. When he finds the perfect lots, he lets the final blend rest on the yeast lees for a minimum of three years—another secret behind the Reserve Club Cuvée’s creamy, rich mouthfeel.
The fresh, enticing nose opens with green apple and lemon mousse aromas followed by ripe pear, a hint of ginger, raw hazelnut and brioche. On the palate, the wine is generous, with a silky texture and creaminess that carry over the fruit notes of apple and white peach, while adding the richness of toffee, honey, caramel and vanilla flavors.
Enjoying Reserve Club Cuvée
Another special difference about Reserve Club Cuvée is that while it is by no means a sweet wine, it does feature slightly lower perception of acidity and a higher dosage—the finishing touch of liqueur for sparkling wines—than our other wines. “This means it is especially good with a variety of soft cheeses,” says Tom. A delicious apéritif on its own, it is also wonderful with summertime favorites such as Crab Louie salad, fresh-caught trout amandine, or a rich pâté.
Summer means more than minding the vines and wines for Tom and his wife, who like to cook and enjoy serving the Reserve Club Cuvée at alfresco meals featuring fresh produce from their garden. “Our cool, extended growing season in the garden is the same climate that is so great for the Chardonnay, Pinot Noir and Pinot Meunier grapes that go into our sparkling wines,” Tom explains. “With vegetables, that means a bit of patience and finding varieties that ripen well here—our garden star is a tomato called San Francisco Fog.”
