Raw Oysters with Tangerine Ginger Mignonette

A little sweet, a touch briny—fresh oysters are so delicious and versatile, we can’t decide how we like them best.

Yields 1/2 cup
  • 4 Tbsp tangerine juice

  • 4 Tbsp champagne vinegar

  • 4 Tbsp shallots, minced

  • 2 Tbsp ginger, minced

  • 2 tsp cracked black pepper

  • 12 fresh oysters, shucked

Combine all ingredients except oysters and let sit for 30 minutes. Arrange the oysters on a platter lined with rock salt or crushed ice. Serve the mignonette in a bowl with a small spoon next the oysters.
