Yountville Vintage Brut, 2008
Aging Profile: Minimum of 2 years on the yeast
Chandon is best known for its non-vintage sparkling wines that are crafted in a consistent style year to year. With our Vintage Appellation Series, we choose to create distinctive wines to showcase the unique qualities of a particular growing season from each of our vineyard appellations: Yountville, Mt. Veeder and Carneros.
The 2008 vintage was marked by a dry, cold spring with heavy frosts. These conditions coupled with a warm summer resulted in low yields that ripened quickly, showing tremendous concentration.
The 2008 vintage has aromas and concentrated flavors of crisp green apple, fresh fig, ripe pear, caramel, Meyer lemon curd and honey. It has a long, creamy finish.
The vibrant acidity of the cooler vintage balanced by its concentrated flavors makes this wine a terrific match with tuna tartare, duck confit, mushroom risottos, roasted halibut in a lemon-butter sauce or the Asian spices of Peking duck.
