Winemaking and More

Regarded as yet another spectacular vintage, 2016 was dry and hot, as it was another year of drought in California. No hot spikes, however, allowed us to pick fruit at optimal ripeness without sacrificing the acidity that is the hallmark of fruit grown in our Carneros vineyard. After harvesting at night and quickly pressed, this Chardonnay was transferred to oak barrels, 100% of which were French oak and 30% new. There it underwent primary and malolactic fermentation before aging for 15 months with regular stirring of its lees.
