We often drink this wine on its own to showcase its complexity, but we also open it with braised pork belly, a wild mushroom risotto, or a treat of caviar blinis.
Winemaking and More
Always selected from our best vineyard blocks, the 2009 is a blend of 60% Chardonnay and 40% Pinot Noir. The grapes are harvested at night to preserve their freshness, pressed immediately for fermentation before being blended and put into bottle for secondary fermentation and extended aging. The wine is elegant and rich.
