Chandon By The Bay is a classic Blanc de Blancs, with the added character of partial oak-barrel fermentation.

You can’t go wrong pairing this wine with pork—pork that is roasted, cola-braised or glazed; duck that is tea-smoked, Pekinged or topped with a fruit compote; or anything flavored with 5-Spice, from short ribs to meatballs.

Winemaking and More

While rare in the United States, Sparkling Reds have long histories in other parts of the world such as Australia, Germany, and the Loire Valley of France. Made as a traditional red wine that then goes through secondary fermentation to make it sparkling, Sparkling Red is a beautiful balance of soft tannins and slight sweetness, supported by Chandon’s signature acidity.

Enjoy this wine on its own or pair it with a variety of dishes ranging from a seared Ahi Niçoise salad, coq au vin, a mezze plate with smoked baba ghanoush, or grilled turkey burgers.

Winemaking and More

More Chardonnay than past years is blended into this year’s wine to preserve its balance and acidity in a warm year. We harvested early in the season, picking the Chardonnay and Pinot Noir at night and pressing them immediately. The 2014 is rich and bold, yet with signature brightness.
