The history of bubbly dates back to the 16th Century. At the time, it was so prohibitively expensive that it was exclusive to elite European nobles. It was Louis XIV’s drink of choice.
Eventually improvements in winemaking technology brought sparkling wine to the masses, but its historic connection to the aristocracy meant most people still thought of it as an aspirational drink.
While sparkling wine became readily available to more people, it was still too expensive for many to drink regularly, so it became a drink only for special occasions. That’s how sparkling wine became so deeply connected to celebrations. Cheers to that!
Over the years, sparkling wines’ traditional ties with celebration naturally connected it to the festivity of New Year’s Eve. In the 1930s, a famed French restaurant in New York City decided patrons could drink whatever they wanted on New Year’s Eve … as long as it was sparkling wine.
