Pauline Lhote, our director of winemaking, leads the CHANDON global winemaking collective. They're constantly innovating and constantly collaborating. She realized, that with the 187ml in very high demand, she can craft these sparkling wines with the same quality level and same style in this small format in Mendoza, Argentina.
Sourced from high altitude vineyards, Chardonnay, Pinot Noir and Malbec are harvested in February and pressed. The juice is inoculated and fermentation begins in stainless steel tanks. Assemblage occurs at the end of the primary fermentation process, which involves blending multiple vintages for a consistent style. The second fermentation takes place in stainless steel Charmat tanks, where the bubbles of the sparkling wine are born. It is then kept for three to four months in contact with the yeast, under pressure. After aging, the wine is finished with a dosage liquor is added and the wine is bottled and ready to chill and enjoy.

Pauline Lhote from California and Ana Paula Bartolucci from Argentina – our two talented winemakers – collaborated to carefully craft this wine that perfectly caters to the American palate.
Sourced from vineyards at 1000 to 1200 meters altitude, the grapes - Chardonnay, Pinot Noir, and Malbec - reach their peak, with Malbec lending the wine its signature blush hue and effervescence.

EXTENDED CHARMAT UNDER SLOW FERMENTATION
Harvest early February to late March. Grapes are pressed to juice.
The juice is inoculated with cultured yeasts. Primary fermentation occurs in stainless steel tanks.
In June, assemblage occurs which involves blending a combination of new base wines with reserve wines from previous years.
The second fermentation takes place in stainless steel Charmat tanks, where the bubbles of the sparkling wine are born. It is then kept for three to four months in contact with yeasts.
A small amount of dosage liqueur is added. After 3 months bottle age the wine is ready!
